At the Capcom Logo press Up Up Right Right Down Down to enable cheats. Then enter any of the following:

Select own character in versus mode
Hold Left

Music test
Hold Right

All bonus characters in versus mode
Hold Left or Right and select Start

Watch mode
Hold Right and select VS
